Smoked mackerel and flageolet bean salad

Following Kerry's reminder that we should all be eating more oily fish here's a really easy, nutritious recipe for two from top nutritionist and food writer Fiona Hunter.

Serves 2
Time: 5 minutes
Cost: about £2 a head though you could cut the cost by making your own dressing if you have the necessary ingredients

300g tin of flageolet beans
2 small smoked mackerel fillets
3 tbsp of ready prepared honey and mustard dressing*
A handful of cherry tomatoes, sliced in half

Tip the beans into a sieve, rinse under plenty of cold water and drain well. Skin the mackerel fillets and slice the flesh into bite-sized pieces. Mix the beans, mackerel, and tomatoes in large bowl. Drizzle over the dressing and mix well. Serve with crusty wholemeal bread.

TOP TIPS

* Alternatively you could make your own dressing by combining 1/2 tsp Dijon mustard, 1/2 tsp honey and 1 dessertspoon of cider vinegar in a bowl, seasoning it with salt and pepper and whisking in 3 dessertspoons of sunflower oil. When the mixture has emulsified whisk in 1 dessertspoon of water
