All-in-one sausage roast

If you want a supper than calls for minimal effort but is really, really comforting try this easy recipe from my book Sausage and Mash.

Serves 2-3
Time: 1 hour + 15 minutes to pre-heat the oven
Cost: £1-£1.50 a head

450g new or Desirée potatoes
2 medium red onions (about 200g)
4/5 cloves of garlic
3 tbsp sunflower or light olive oil
6 plump 'premium' sausages with a high meat content*
Salt and freshly ground black pepper

You will also need a medium-sized roasting tin or baking dish

Preheat the oven to 200°C/400°F/Gas 6

Scrub the potatoes clean but don’t peel them. Cut them into chunky slices (about 4-5 cm thick). Peel and thickly slice the onions and garlic. Put them in a medium sized roasting tin with 3 tbsp oil, season with salt and pepper and mix together well. Roast for 20 minutes, turn the potatoes and onions then lay the sausages on top, turning them so they get a light coating of oil. Cook for another 20 minutes, turn the sausages over then cook for a final 15-20 minutes. I don’t think this is a dish that needs gravy but if you’re a gravy addict feel free. I’d serve it with a classic French-style green salad.

TOP TIPS;

* It's worth buying top quality sausages for this - flavoured sausages like lamb and mint work really well.
