Salmon Burger with Red Onion, Caper and Parsley Salad

A great burger recipe for pescatarians from Nick Stones, head chef of Harrison's Brasserie and Bar in Balham  "We chose this recipe for students as it’s easy to make, it's something different to your usual beef burger and it's super tasty!"

Serves 6

For the burger
1kg salmon
1 large knob of ginger (to taste)
5 garlic cloves
2 chillies (deseeded)
½ bunch coriander
1 lemon (zested and juiced)
1 lime (zested and juiced)
6 burger buns

. Finely chop the salmon, ginger, garlic, chilli and coriander
. Mix all the ingredients together along with the zest and juice of the lemon and lime
. Shape the mixture into 6 burger patties then sear the burgers on each side for about 2 minutes
. Place between a burger bun with a little mayo and baby gem lettuce

For the salad
1 red onion
Small handful of capers
1 bunch of parsley
Salad dressing

. Slice the onion finely then pick over and wash the parsley, removing the stalks
. Toss all the ingredients together with a little salad dressing

Serve alongside the salmon burger and enjoy!
